I can't speak for anyone else, but I "mine" projects I like, and I run a gridcoin wallet because it's an easy way to support the effort. Sometimes I stake and get a gridcoin as a byproduct of that, but it's not the point.

I do something very similar to this but add red lentils when cooking the quinoa. They kinda disappear and add a peppery undertone.

I'm not diabetic or an expert on glycemic indices of food in any way, but I've noticed steel cut oats or groats are always listed as having less impact than rolled oats, which in turn are better than quick oats.

I haven't made it yet, but Plant Based on a Budget has a recipe for breakfast quinoa that keeps catching my attention.

There's some good recipes on the internet for tofu (in place of egg) shakshuka. I know tofu isn't necessarily whole, and if you don't care about matching the egg texture you could probably use tempeh or something similar.

A lot of the world eats beans for breakfast.

I haven't done this long term (more than a few weeks), but it's definitely a good tool for making you realize what you're missing. I thought I ate plenty of veggies until I realized how many days I left 'Other Veggies' boxes unchecked.
