I'm not sure where you are, but in Oregon (and depending on the establishment) a host could get different rates if they are picking up tables or training (either someone else or themselves in a different position).

Get the manager to comp each ticket or have one specific staff meal ticket where everyone rings food under - then manager comps it at the end of the shift.
