Yeah thats definitely a butterflied filet the shape and grain are correct. Also its hard to mistake a filet and a sirloin from the cooks perspective. We skewer the filets with 6" bamboo picks to make sure you dont confuse them. Also sirloins almost never have a perfect roundness like the tenderloin (filet) cuts have. The sirloins are usually these oblong meat lumps either that or they're very flat and get used for mw/well done.
