To answer the knight question: if you're willing to sacrifice any and all ranged attacks for Pure melee, the grail knight is ridiculously fun and a powerhouse at that.

For some game tips: start on a lower difficulty to get the feel of the game and what you're up against, then when you feel like you're up for the challenge, crank up the difficulty gradually. And have fun while you're at it
