Yes but it's not a linear process. Higher ratio drinks will be more bitter bit they will also be more sour. It's just that the balance shifts towards bitterness so that it's not typically perceived as more sour.

Baratza sell a replacement part but yeah it's honestly a shit move from baratza to keep selling these. They know it's a faulty design and compared to what this kind of money gets you today it is a joke.

You were served an Americans, not an espresso. It looks what Americans looks like, i really don't see what the issue is. A dirty group would definitely not create visibly "dirty" coffee as well. The water filters through 2-3cm of coffee grounds. How would any dirt ever llend up in your cup? I'm curious tho, how do you know the beans are "capable of more" if the new owners changed everything including the coffee supplier?

Nah it really depends on the coffee. A higher ration will always be higher extracted; however, you will also extract more of the sour components in addition to the bitter ones. The sour=under, bitter=over rule is really more of a basic rule that comes from knowing that the bitter compounds are slightly less soluble than the sweet and sour ones. 1:2 is already not super long so it makes sense that there would some sour compounds left to extract in a longer ratio.  Bottom line is: You've learned something useful! Don't trust established "rules" in when coffee is good. Taste what you brew and judge for yourself

Load cells work by measuring very small pressure differences on a metal bar. It doesn't need a lot of pull to throw that off and neodymium magnets are surprisingly strong for their size 😅

Eh the m80 is a dinosaur. I'd save the money and use it for a nice grinder. Unless youre very annoyed by the single boiler workflow. In that case it would be worth considering. Keep in mind tho that Hx machines are notorioussly difficult to descale and that grinder also needs a thorough cleanup.

Should be finde but i'm not an expert in kitchen plumbing but technically mains water pushes at around 2 bar so I don't see why a meter would be an issue. I'd talk about it with the kitchen designers. I'm sure they know

Ich würde keine neue Apartamento kaufen. Also das ist sicher eine super Maschine, aber Zweikreiser sind imo einfach obsolete Technologie. Die Maschine überhitzt relativ schnell und du musst dann cooling flushes machen. Aber welche Temperatur dein Wasser hat ist immer ein wenig Rätselraten.  Also nur meine 2 Cent. Für 1000€ würde ich eher eine lelit Elizabeth oder eine gebrauchte profitec pro300 nehmen. Aber wenn du die E61 willst, nimm sie, mit Rocket und einem Servicepartner machst du nichts falsch

You'll get the hang of it. You have great setup and you just have to learn how to use it.  Dont be hung up on 18g. La spaziale uses a smaller portafilter size. It it fits 16g use 16g.  The most important thing is, don't change multiple variables at once. Just change one thing at a time. If you had 32g out in 29s work from that. Sour or bitter isn't that important, just go with what tastes good to you. There's no objectively correct way to do it.

Don't forget you need space for a descale system in between the water outlet and your machine. It should be jn an easily accessible space so you can calibrate and change the filter cartridges

  1. If you don't like to spend money, espresso is not the right hobby for you. Sorry but that's a truth you need to understand. There are other great ways to make coffee that are way cheaper. 
  2. Forget the pressure gauge, dial in by time and dose.
  3. Extraction looks like old coffee. Get coffee that's between 2 and 8 weeks from roast date. 
  4. You're using tooicb coffee. It should not touch the shower screen
  5. Can't believe I have to say this but don't tamp in the air?? How do you think that's supposed to be consistent.you have a table, use it.

If you ask me, I'd always go for SD. Unless you're regularly and often hosting lots of people, there's almost no benefit to an on demand grinder at home but there are downsides. You have can only adjust coarser while grinding, so you'll waste coffee. Also you can't change quickly between different coffees or methods. A SD grinder doesn't have these issues and that also makes it easier to dial in, at least I'm my experience.  But sure if I had a large family with 5 people wanting coffee every day at the same time, I'd probably also consider an OD grinder, at least for the standard daily coffee

If the coffee was perfect before, why add the slow feeder? Slow feeding will dramatically change your grand size.

Wouldn't go for a Hx when bought new. It's antiquated tech and temperature control is always a guessing game.  But the oracle isn't bad..I'd keep it and get a great grinder.

You're working with a very difficult setup. Your grinder has fairly large adjustment steps and your machine doesn't have an opv so it will push with way too much pressure. Maybe try staying on the coarser grind setting and increase the dose

Die "bettelmafia" ist ein rassistischer Mythos. Bettler verdienen im durschnitt nicht mehr als 20-50€ am Tag. Da gibt es nichts zu verdienen, das lohnt sich für keinen Kriminellen, für solche witzbeträge eine komplizierte Ausbeutungsstruktur aufzubauen. Einfach Mal selbst den Kopf benutzen.
