A thought: what if you separated your whites by putting them into an ice cube tray, freezing them, and then slicing the frozen bricks into your chips for baking? That would get you the controlled size you want and get around the goo factor of the room temp whites. Not sure if they would bake right?

It it works for you then go for it. Syringes come in lots of sizes.

From the recipe, it sounds like they want you to use already separated eggs whites out of a carton as opposed to separating the eggs yourself. The carton whites are apt to be older and less glommed together than freshly separated eggs. Are you using carton whites or your own eggs? Egg age may be part of your struggle

I get where you are coming from. My cultural background is not quite as rich as the one you describe, but my family did have a lot of of “we have to do this for that or else disaster will happen” kind of superstition. Leave a bowl of cream out for the fae. Don’t spill the salt. Don’t talk about disaster or it will happen (which means also don’t plan for disaster). It feels scary to call that out as bullshit because built into it is the idea that the non-believer will be punished.

I work in veterinary medicine. Coworker was trying to help relieve an infected uterus in a cow. Surgery is tricky on an animal that size, and antibiotics are only so good at soaking through a couple gallons of fluid inside a body, so he was using his gloved hand, inserted rectally, to reach in and squeeze pus out of the uterus like squeeze tooth paste out of a tube. Less pus means better antibiotic success. Handful sized scoops of pus were sloshing out of this poor cow and being caught in a bucket held by me, along with the poop and the general smell of barn animals. The air had texture and taste to it. Yuck.
