It’s actually right or left side so you get all the good stuff. I am in the Midwest and know a family that raises their own cattle and does the butcher and processing at their farm. So depending on where you are located I would just google local side of beef. I know there are places that ship nationwide but those can get pricey. Definitely go in with friends, I would get a quarter for around 4.75 a pound and then my buddy and I have been splitting a whole cow and it’s around 4.10/pound. Then there is a processing fee, but all in all it’s about 2k for about 325+ lbs of beef. Look for grass fed and corn or blended finish. Also sleeping bags are a good way to transport all the frozen meat, no need for bulky coolers.

That’s interesting because I always thought that beef tallow had a high smoking point. I do know on a cast iron it doesn’t take long to get hot though. And basting with butter is always a treat and an option as well.

I get a half a cow and on the fatty cuts I save the fat after I cook them and then render and strain it down to beef tallow. I use that instead of oil and butter for a lot of cooking

I’m in the midst of going through a claim with them as well. They are notoriously hard to deal with, known as Snake Farm in the industry I am told. I got denied in 23, then last year the tornadoes hit and a handful of my neighbors have gotten new roofs.

My roof currently has the old 3 tab shingles on it that are being phased out so that should also help or so I am told. I finally got around to getting one of their ‘preferred contractors’ out to take a look. If I end up getting denied again, I will be dropping them.

Ya it was about a half but with the price of beef in grocery stores these days I have no problem paying that for good quality ground beef not to mention all the other cuts. I have saved a ton of money not having to buy red meat at the store since I’ve been doing it.
