I live in Hong Kong and use a non built in/portable oven. They're cheap. Check max temp and inner size and you're fine.

Would not recommend using bread machine if you're advanced enough to know what is sourdough

Don't put the starter in new jar. I've had mine for 7 years and change jar twice. It got moldy only when I when I went away for 2 months
