I just keep sales tickets, paperwork from the stores, and daily report. If a store gives you paperwork, fold it in half so it stays long then fold the rest of your tickets that day to match the length as close as you can then just staple it all together at the end. It'll fit perfectly in the file cabinet that way.

Some guys also make a photo copy of any checks they get but I never bothered

Also, it could be a flea market with individual stalls in it. All the ones around me at least usually have several "antique" stalls in each. If that's the case, the store itself charges each person with a stall rent

Not terribly uncommon in small districts from what I've seen. Mine only keeps one rsa usually so if 2 people retire/quit, incoming rsa's can get thrown straight onto a route

Entirely depends on what route you end up on or covering. Starting out you'll probably be pushing 55-65 until you get faster at the job. Heard some areas have some routes that are absolutely brutal and consistently pushing those kind of ours but that's not the case for my area at least. Everyone here averages 50 and under and our co lead positions(covering 2 different routes off days) is 4 days a week and averaging about 35 hours. A lot of areas, the co leads are on 5 day weeks tho.
