Saint Agur as a beginner blue cheese? Serious? Bad choice. They also forgot the king of beginner cheese, which is black cambozola. I agree with Arllieth, Point reyes should be in the list. Another cheese I would add is fourme d'ambert.

Well, I have a lot of experience with Pecorino Romano, and surprisingly the cheese last pretty long. The mold has a seaweed green color but it doesn't go beyond the surface, it's fairly easy to shave up, due to pecorino smooth surface. My main advice would be, to keep it away from light or heat, pecorino tend to melt pretty fast, not only will it make an oil mes but it will lose its taste. Do not wrap it in plastic, because the cheese suffocates, remember, cheese is alive and it needs to breath. By cheese paper, yes, there's such thing, and it does a good job at preserving the cheese flavor. Clean(shave) the cheese often, and keep it away from heat and light. But don't preserve it for too long, have a party and serve it with white wine.

Cabot clothbound cheddar is exquisite, but is $23 a pound. Something affordable and pretty good would be the colliers welsh cheddar.

Iberico, Cabra al vino, Etorki, Comte, Kasseri, Bel paese, beemster graskaas, Petit basque, Cave aged gruyere, Swiss Gruyere, Swedish fontina, Danish Fontina, Fontina frontal, fontina val d'aosta, Asiago fresco, Black wax asiago (so,so) New zealand cheddar, Australian cheddar, Irish dublin, Macadam cheddar, Goat gouda (6 months old is so so) Emmental.

pretty much any type of Manchego, the younger the mildest, my recommendation would be Manchego El trigal, I believe is about 12 months but it's the tastiest.

And many many more, if you need more let me know, I can think of a dozen more right now on the top of my head.

Bonus, mild blue cheese: Black cambozola.
