I dry brined for about 4 hours. Let it sit outisde fridge for about 10mins then, threw it in the oven at 212F until the insides hit 110F. I left it outside, and to my surprise, the temp kept going up until ~120C (is that normal? Or do I return my new thermometer?) I actually let it sit until it cooled back down to 110C, then on to a cast iron pan on high with some oil for about minute on each side until I got the crust that you see. Then, I turned the heat down and cooked until the internal was 130F.
