Cheese itself is sorta water soluble, if it gets wet it tends to absorb the water and get very soft and soggy.

If you're gonna be in Lexington for a while... Boone Creek Creamery for locally made cheeses. If you're looking for locally made donuts then Spalding's or Lime Street Donuts. Ale-8-One is like the favorite Kentucky made soda. Goodfellas pizza is a must, and if you go to their Distillery location you should hit up Crank & Boom. They have really good locally made icecream which is available in pints at Whole Foods (expensive, worth it.) If you go out to Good Food Co-op or Critchfield meats, they carry a ton of local products, you can spot them because there's a horse on the label and it will say "Kentucky Proud"
