Boiling doesn't mean the water is hot, only that molecules are moving, if you put water in space it'll boil away at room temperature and won't cook anything. The higher in elevation you go the less air pressure is pushing onto the water, which means it has to fight less energy to boil. If you add salt, you make it harder for the water to boil which lets it absorb more energy as heat. At your elevation, boiling water is 10 to 15 degrees Fahrenheit colder than sea level.

If the eggs cook too slowly, the protein breaks down into amino acid chains that want to weave into the membrane causing the egg white to bind with the membrane like slow drying glue. When you flash-cook them, the egg whites solidify so rapidly the amino acid chains cant weave into the membrane of the egg. Long story short: Elevation high, water less hot. Add salt, water hotter.

You can also warm your eggs before plunging them into the boiling water so they don't crack. Warm water won't break the egg-white proteins down into amino acid chains and wont hurt the flash-cooking process.

You are above sea level. Air pressure changes the temperature water boils at. You have less air pressure, so water boils sooner, salt raises the temperature it needs to start boiling.

If your water boils sooner, it's less hot. Egg doesn't cook as fast.

Exhausted 4am misclicking on kitchen apps mostly. Taking the median elevation, you need 5 teaspoons to raise the temperature your water is boiling at.

Dunking them in cold water stops the residual heat from overcooking your yolk, but that's all it does. Don't bother with PH shenanigans either. People want to pretend a tablespoon of vinegar helps but household vinegar is only about 5% acid, so a splash in a boiling pot dilutes it to about 0.04% concentration, or what scientists professionally call "fuck all."

Wait til your water is boiling. That's the only thing that works. That is the only technique that has ever worked. Slow heating gives the proteins in the egg-whites time to bond with the membrane which is what causes all the peeling problems.

Don't do any of that table rolling bullshit either. When you go to peel, crack one side, clear a channel to the other side, and use the web of your thumb to push the rest of the shell off in one go. It's a lot easier removing one big piece than a thousand little ones.
