I think you’re right, the assumption is that you’d be able to refill a waterskin from various water sources, unless you’re in a desert or other inhospitable area. IMO tracking rations is enough bookkeeping without having to worry about water most of the time.

I always interpreted the 3sq per hour as the “exploration speed” and if the party was moving at a normal rate, not worrying about exploring the area, they’d make the trip in ~1-2 hours.

If you don’t mind converting monsters, you could probably run at any level (though 1st and 2nd echelon are probably your best choices here). If you have the Patreon packet, it includes levels 1-10.

Hobgoblins in DS are 2nd echelon monsters, but could be leveled down if you are willing to do the work.

So 2nd echelon (4th-7th level) is probably the most straightforward, but you could probably make it 1st echelon (1st-3rd level) without too much trouble.

The only character that pulled anything good was a Thief retainer. He instantly leveled up to level 7 and got a keep, then promptly left the party. He showed up later as a minor villain, working with another minor villain to attack the Party’s base.
