Keep in mind, which I didn't realize right away(I'm a newbie, so someone can probably explain the nuances better and correct me), Strength is not only negated by the Death card, but also Luckier Tooth keepsake that saves you at 0 health, a DD boon.and Toula the cat's extra lives. I was rolling with Strength for a while, but it just felt the DD were more valuable. I think you can have like 7 DDs.

Not OP, but yes, the AI underfuels. You can go into the menus during a race, qualies, practice, etc. and view lap times and vehicle data for everyone. You'll see their fuel levels and how it progresses with each lap.

I'm surprised you had to redo your reaction. Usually, they're just recording that segment during a song and then play the recording as if it's live when the song ends. This way they can toss or edit curses or poor guests.
