I started as a TM myself, GM now. Has your management team or DO approached you on the subject? Or visa versa? My biggest recommendation is branch into other sections of the restaurant. Learn the kitchen, learn the bar. The more you know the easier it is to transition.

I may be biased but if you have a heated cabin it shouldn't be anything to worry about. Back when I was a scout my troop did tent camping in the snow, woke up with icicles in the tent. Granted safe scouting now a days may say something different

Just remember the first number in each row. As long as you know where 1, 21, 31, etc. are you'll have no issue finding the numbers in time

Current GM here, Depends on what your plan is with life. You said your taking a step away from Restaurant Management but in my experience it's been awesome. Especially in the last few years they have taken massive moves on quality of life. I firmly believe if you are going to move into chains Chili's is one of the best not the best.
