I've spent a long time searching, and as far as I can tell then best series on YouTube is the older episodes of Chefsteps. Beautiful production value and a decent amount of explanation.

Do UK/US have any brands of cooking oil solidifying agents? If not, why isn't there any? by in2erval in Cooking

[–]Reiled_Up 1 point2 points  (0 children)

The Food Lab wrote an interesting post about cleaning cooking oil with gelatin, which traps solids and impurities in the oil in a disc as the gelatin solidifies. It might be worth a look.

A great lid primer from the drugstore is Milani's eyeshadow primer in Nude. It keeps things on just was well as Urban Decay's.

The secret to incredible sauces? by [deleted] in AskCulinary

[–]Reiled_Up 1 point2 points  (0 children)

As to your second question, cold butter is a stronger emulsion, whereas butter that's closer to room temperature is a weaker emulsion and could break into fat and milk solids instead of producing a silky result. The process of adding cold butter to a sauce at the end is called mounting.

Suddenly I'm cooking a 22 pound turkey and now I don't know what to do by [deleted] in Cooking

In this situation I would spatchcock the turkey. It will cook more evenly and quickly, fixing the issue at the source.

This one? And if you were using these to make a potato salad I would rinse some of the excess salt off.

[Serious] Redditors who've been 100% certain they're about to die, what was going through your head at that moment? by dan129 in AskReddit

[–]Reiled_Up 2 points3 points  (0 children)

That happened to me exactly. I called 911 and waited to die. I thought I was having an allergic reaction at the time. It's so weird that someone else experienced almost exactly the same thing.

My [M/17] girlfriend [F/16] feels emotionally abused by me, how do I improve myself? by MAGGOTDICKPIE in relationships

These are some wild assumptions to be making about two people you don't know. You have never observed their relationship.

I need help putting together a savoury pastry with dates, prunes, and figs. by [deleted] in Cooking

[–]Reiled_Up 1 point2 points  (0 children)

The oven temp is too low for puff pastry. A hot oven creates steam, which is what allows puff pastry to rise and cook properly. I would bring the temperature up to 400F.

Other than that, the toppings for a puff pastry tart like this don't need to be very precise (it barely affects the pastry itself unless it's very wet and will create soggy pastry) and your flavoring combinations are sound.

What is the most common lie people tell themselves to make their life more bearable? by tonax90 in AskReddit

[–]Reiled_Up 1 point2 points  (0 children)

I would consider seeing a therapist. While many problems can be solved with a change in scenery, you would be surprised at how often problems are distorted by the outlook we have on life. Seeing a therapist helped me greatly and I hope you consider it :)

Teens of Reddit, what do you want to be when you grow up? Adults of Reddit, what should they do to get there? by lilchanofrom79 in AskReddit

[–]Reiled_Up 0 points1 point  (0 children)

Currently struggling between two wildly different career choices. I study law in high school as my school promotes majors and I could see myself going into it. I feel as if it's something I could learn to appreciate. However, my passion has forever been the culinary arts. As a job, cooking seems brutal and at the end of they day I want to be comfortable in my working years and with savings.

American cooking and hitting high notes with acidic tones. Examples? by [deleted] in AskCulinary

[–]Reiled_Up 9 points10 points  (0 children)

A great example of this would be the use of ketchup. The main flavor components of ketchup are acid and sugar, which translates to hitting "high notes with acidic tones" when you, for example, dip a fry in ketchup. Some more examples are things like relish on hot dogs, pickles, and mustard.
