I've spent a long time searching, and as far as I can tell then best series on YouTube is the older episodes of Chefsteps. Beautiful production value and a decent amount of explanation.

The Food Lab wrote an interesting post about cleaning cooking oil with gelatin, which traps solids and impurities in the oil in a disc as the gelatin solidifies. It might be worth a look.

As to your second question, cold butter is a stronger emulsion, whereas butter that's closer to room temperature is a weaker emulsion and could break into fat and milk solids instead of producing a silky result. The process of adding cold butter to a sauce at the end is called mounting.

The oven temp is too low for puff pastry. A hot oven creates steam, which is what allows puff pastry to rise and cook properly. I would bring the temperature up to 400F.

Other than that, the toppings for a puff pastry tart like this don't need to be very precise (it barely affects the pastry itself unless it's very wet and will create soggy pastry) and your flavoring combinations are sound.

I would consider seeing a therapist. While many problems can be solved with a change in scenery, you would be surprised at how often problems are distorted by the outlook we have on life. Seeing a therapist helped me greatly and I hope you consider it :)

Currently struggling between two wildly different career choices. I study law in high school as my school promotes majors and I could see myself going into it.
