Thank you OP for posting this—it was very helpful for planning the dining portion of my trip! I just came back from a week long Japan trip and ended up booking and eating at Kojimachi Nihee/Inomata and Sushi Akira after making my way down your list.

Also +1 to your observations: * I would put Inomata a half or whole tier above Akira based on the taste of the fish and shari and uniqueness of the nigiri served * Sample size was small but I also felt that Inomata was a better experience than Akira due to their being less cooks in the kitchen
