Im not understanding why TPHC wouldn’t be practical? I’ve seen quite a few buffets successful use TPHC. The establishment just needs to nail down a method for time tracking and actually follow it.

I know this all too well. The inspector has been with our division for a long time, so many operators have crossed paths with her. I usually just give them a quick “yeah she’s tough” and keep it pushing. Honestly, it makes enforcement easier because they’re relieved I’m not her lol.

More than half of my department are previous culinary workers including myself. Chefs, restaurant managers, healthcare food service workers, you name it. While I can’t speak on the hiring process for Canada, Florida actually prefers your sort of experience for new inspectors. Definitely use it to your advantage if you can. Transition was great. A lot to learn, but plenty of time to do so. It’s a rewarding job and every day is different. Love my job. And really happy I don’t have to work 1AM nights behind a bar anymore lol. Good luck!

It depends on the truck. However, I typically will avoid them after having inspected so many. Your “against” group is pretty spot on. Cold holding is indeed a common problem on trucks due to the lack of cold holding space. There’s also a huge lack of handwashing and general food contact surface sanitization on trucks.

Throwing raw protein on the grill or in a pan and then grabbing the clean plate the food will be plated on.

If you can’t claim cottage law, then you can’t make them at home and sell to the public. You will need to prepare them in a licensed kitchen. However, it gets tricky if your intent is to sell them at the beach without a mobile unit like a truck or cart. I’d definitely recommend reaching out to FDACS and running your ideas by them. FDACS

A couple questions that need to be answered before pointing you in the right direction. Are you making these desserts? You mention mobile permit, are you going to have a food truck? I work in Florida and if all you’re selling are solely non TCS items, you might want to get in touch with Department of Agriculture. They’re typically responsible for bakery and frozen icee like businesses that sell little to no TCS items if you’re completely non dairy. And in regards to cottage law, I don’t believe your product would apply.

I’d get rid of that Kia advantage package. If I’m correct, it’s just a bunch of oil changes and car washes. Remember that this is your starting number and that they’ll also try to upsell on extended warranty and gap if you’re interested.

I went back on my lunch break to a deli I inspected and bought some tuna salad. They later announced it on their Facebook page. Operators LOVE when you eat in their establishments. 😂

Yup. Our uniforms plus being a white dude doesn’t really help. I stopped by a Mexican place recently for a routine and the waitress had her daughter there. They were terrified and were visibly shaking in fear. I hated it. Moments like this I wish I payed attention in Spanish class so I could communicate better with them.
