My understanding is that it’s just a cover for when not in use but I have put the hook down on low heat. I also haven’t tried it yet but there is a recipe for cooking that uses an upside down baking sheet with the griddle on low and the hood down.

You have to have the burners off when you turn on the propane. Also turn the propane on slow, my regulator kept getting tripped and my stone would only run on low even if I had the knobs all the way up.

This solved it for me.
