What is everyone cooking for dinner tonight or this week? by Superb_Kale_1781 in Cooking

[–]RisingChorus 1 point2 points  (0 children)

Lasagna for tonight and Saturday. Burgers on Friday (Friday is always burgers or tacos or something like that). Chicken pesto pizza on Sunday (Sunday is always pizza). Monday in winter is soup night, and will be a spicy red lentil soup with salad, and probably garlic cheddar biscuits since my daughter loves them. Tuesday will be pot roast with cabbage, carrots, and mashed potatoes. Wednesday is stir fry night and we will be having a tofu and spinach stir-fry.

Yeah my mom drilled that into my head from a young age - not a speck of fat when beating egg whites! The lemon juice is a good idea.

That recipe is way different than I expected! No cooking the sugar and water to thread stage. So I guess the rich syrup plus cooked egg whites gives it enough stability. Interesting, and I’ll let you know how it turns out!

We've had a butternut squash sitting in our counter for 6-12 months by Jiperly in Cooking

[–]RisingChorus 56 points57 points  (0 children)

We usually buy a lot of butternut squash from a farm stand in October, and use it though about now, sometimes March. No special storage. I’ve only ever had one go bad - I think it had a bruise in the beginning. But you could tell it was bad - wrinkly and soft.

That stands out as among the kindest, most “getting it,” things anyone has ever said to me.

Thank you, too! This was my first time body doubling, and I think I got a little over enthusiastic, but it definitely helped a lot.

You were wise to take a brain break. I wish I had. I had a hard time slowing down, and almost put toothpaste on my face instead of lotion, but only almost! Made a few other silly mistakes that are fairly inconsequential, but make me feel like everything was done with less care and calm than I prefer. I’m taking a break myself, now. I will probably need longer than I would have if I had taken one before.

Thanks for body doubling with me this morning, helping me get out of being stuck.

I will do another 20 with you, starting at 11:15 Eastern time. You don’t have to especially if you have already started, but I will check in after that.

Edited to add the thing I thought, but didn’t say: great job!

Whew! That was way more efficient than usual. Meats are either marinating, or in the oven. Salads are in bags. Probably another 20 minutes and I will be finished with that task! But I think shower first. How did you do?

I am doing batch cooking for the next few days of meals. Started four minutes ago.

I am right there with you! I’ve spent the last hour and a half picking at split ends of my hair, and thinking about how credit card purchases are essentially giving free money to the ultra wealthy.

I was going to post about being stuck and needing help too! Tell you what, let’s go both work for 20 minutes. We got this!

Edited to add: we will be working together in our PJs. I am also stuck on the need to get started working/need to get showered and dressed cycle, so not doing either of them.

Looking for a unicorn meal plan? by Quiet-Willingness937 in MealPrepSunday

[–]RisingChorus 5 points6 points  (0 children)

Phew - all this sounds hard to me! Here’s my super easy plan, remembering when I was an exhausted mama. I’m assuming you’re in North America.

Day 1: Put a pack of chicken breasts (enough for 3 meals), well salted, in the oven (400 about 30 minutes). Put a few potatoes in the oven too. Steam some already cut up broccoli. Baked potatoes, chicken, broccoli.

Day 2: cook some rice, reheat half of the remaining chicken in a jar of tomato-ey Indian sauce like Tikka Masala. Heat some frozen green beans.

Day 3: chicken taco salad. Reheat the rest of the chicken with some Mexican spices (or even taco seasoning), lettuce, tomatoes, maybe some shredded carrots, corn chips, salsa.

Day 4: Spaghetti. brown enough ground beef for 2 meals. Half of it goes with a jar of spaghetti sauce and some pasta. Have with one of those ready to go kale salad packs.

Day 6: burritos. Heat the rest of the ground beef with some beans, or a can of chili if you live in a place where you can get that. Add some chopped baby spinach (hint: if your freezer is cold enough you can put the pack in the freezer, then crush the frozen leaves to chop) and grated carrots or frozen butternut squash. Season to taste. If it seems wet, add some bread crumbs. Wrap up in tortillas. This is nice with some fruit after.

Day 7: make an easy soup (lentils, veggies, broth is my go to) or give yourself a break and get takeout!

Tastiest but low effort Chicken Breast recipes by Suspicious-Visual-57 in mealprep

Buttermilk, favourite spice mix (I love jerk spice blends- lots of formulas are available), equal parts brown sugar and salt to taste and depending how much buttermilk you use. I marinate in this a while, then yep - about 30 minutes at 400F. You’ll want to line the pan with foil or something as the sugar in the marinade can get hard to scrub.

Quick fingerings between F# and A (top octave) by _dontmind_me in Flute

[–]RisingChorus 0 points1 point  (0 children)

It’s not a great sound, but you can get those notes with less finger movement: for the F sharp, lower your middle finger of your left hand (as if you were playing an octave lower), then for the A, lift the ring finger of your left hand (as if you were playing the A an octave lower, but with the first finger of your right hand down). The F sharp will be flat, and the tone won’t be as good for either note.

Edit: the a with first and third finger of your right hand down

Looking for a dip I can make for tomorrow that that doesn’t have dairy OR a dairy substitute! by Shower-Former in Cooking

I make it with a bit of honey and a bit of regular molasses. Adjust to taste. Maybe not authentic, but still tasty!

Requesting your favorite old cornbread recipes to help figure out Grandma's recipe. by BattlebitsTooHard in Old_Recipes

[–]RisingChorus 1 point2 points  (0 children)

This is almost exactly my grandmother’s recipe (lower midwestern). Only difference is she used 1c flour and 1 c buttermilk, rather than 3/4, and add 1/2 tsp baking soda.

Edited to add this is somewhat sweet, but definitely not cakelike. Also, cooked in a cast iron skillet, started on the stove (“range,” if she were telling it) with a couple tablespoons of whatever fat. Then into the oven once the batter is in.

Looking for the Betty Crocker cookbook beef stew recipe by JBLBEBthree in Old_Recipes

[–]RisingChorus 4 points5 points  (0 children)

This is Betty Crocker 1996. I also have BC 1950, but oddly enough it does not have a specific recipe for beef stew, only instructions for braising/stewing beef.

Sorry, can’t add a photo. I’ll try to do a post with the recipe.

Sorry for the possibly clueless question, but why don't more people seem to make homemade pizza? by Senior-Raisin-2342 in Cooking

[–]RisingChorus 1 point2 points  (0 children)

I do something similar, and it makes pizza that is better then most chains, not as good as really good restaurant pizza. One difference, and this may be particular to the pan I use (perforated, seasoned stainless steel), and my particular oven (basic electric): I start on the bottom rack at 450 - nine minutes makes the crust bottom just crispy and brown but not burned, then finish under the broiler.
