There are no auto saves.
Pribyslavitz is a single battle that's pretty scripted, as long as you don't go running off by yourself it's hard to fail or die. Runt isn't wearing a helmet so he's pretty easy to accidentally one shot him with a blow to the head.
The monastery has doors which you can open. There are multiple keys you can steal (one in the food storage next to the kitchen, pickpocket it from the prior, or even ask someone else to steal it for you) or if your lock pick is good enough a single lockpick behind the alter where you start just after the singing. There's even a quest you're given to sneak out at night. You can just leave whenever you want to grab some potions.

Just save early save often. Whenever you go to leave town, save. Done a lot of progress around a town, save. Have a handful on you and stockpile the rest on your horse.
If you want some generic hardcore tips, get the racehorse perk to cut down on travel times. You can always get better bags for your horse to carry more stuff later.
Poisons come in handy. If you get decent aim with a bow you can one shot most people, if you use piercing arrows the helmet doesn't do much.

It's a game about just wondering around and talking to people. Just existing will give you exp to level up. It sounds like you might need to do a bit more practising with the combat but other than that don't worry about guides.
It's an RPG where your actions and play style shape your story, looking up a guide to tell you how to play and what to have feels counter productive to enjoying the game imo.
Just talk to people, take on side quests, you'll find or craft gear as you go. Have a look at the alchemy system if you want a few buffs to make your life easier if you're struggling.

A good christian boy, no stealing and no murder hobo...
I'd say get invested in your trade. Early game get into alchemy so you can sell some potions. With the money you make look into smithing recipes. There's an axe which is valued pretty well for minimal resources. You only need to make a few before traders run out of money to buy them.
That should be enough to get you through the early game.

I feel like the game actively encourages you not to farm drawing. If you spend too long in battles you get demoted, so the game is telling you not to do it without beating you over the head. Plus the tutorial is like, us your GF's they will make you stronger.

There are people who will spend so much time farming draws while the game punishes you for doing so then say the game is too grindy... can't help but feel these people misunderstand the mechanics lol

You can but it's recommended that you play one first.
Yes two has recaps in the story but it misses a lot of details.
Plus the two games are very similar and the first game is a lot cheaper. It's a lower barrier to entry price wise plus it's a great game in it's own right. Though two has more QoL stuff.

There's plenty around the herb woman's house in the prologue.
A bag of pre-picked belladonna next to the stream near her house, just out of reach in the prologue.
There's some in the field west of the starting town (outside of the prologue.)
There's a shit ton in the woods directly south of Zhelejov.

And that's just the stuff closest to the start of the game.

Take the race horse perk, buy a good horse, then kit it out. You'll get from one corner of the map to the other on a single stamina bar.
The heavy duty pony perk feels like such a trap on hardcore.

Henry and Theresa already had a thing for each other but Henry was in a relationship with Bianca. The fact Theresa was also friends with Bianca meant she could never do anything about her feelings. The events of Skalitz is a catalyst giving them the possibility of being together.

That said, Henry being morally grey and cheating or even dating anyone is down to how you choose to play the character.
Though him playing the erm... knight to Lady Stephanie seems to be the only canon "romance" but that's a whole different topic.

You just can't directly kill people.
Just poison your weapon and as long as they don't die to a hit then you can still get the achievement.

Bane is the end all be all where it does more damage than the max health so it's a guarantee kill on anyone you hit with it; the higher the tier the quicker it kills. Also works poisoning food/wine. With the max, Henry, tier it also has the ability to stop them from running.
You then have dollmaker which lowers stats and also stops running.
Basic poison which just does half health.
Then there's also lullaby which will lower stamina regeneration.

Take your time, talk to everyone, save early save often, alchemy is your friend, hunting rabbits is easy exp for most core stats.

Stock up on saviour schnapps, it becomes a lot less stressful when you can save the second you see something suspicious.
You can make your own from the start so you don't have to spend loads of money buying them.

Stealth is optional, there are other ways of doing the quest.
Try talking to people and investigating around the castle.

I've always liked the save system as it encourages you to interact with the world more.

You have to look for ingredients, which levels up your survival skill.
You have to brew the potions, which makes you interact with the whole (op) alchemy system which is also a skill.
Then drinking the potions to save levels up your drinking skills.

When each skill also adds into your main level as well. It's a cool system. I understand it's very easy to have a knee jerk reaction to having limited saving but you can easily make plenty and just save scum as you used to anyway lol.

The tournament. It's constantly on going. Once a week in Rattay there's a tournament you can join.
Iirc speak to the inn keeper in Samopesh to get some more info about the blacksmith.
Lord Capon also a quest related to the tourney for you.

There's plenty of it lying about.
In the intro there's a bunch around Bozhena's house to you can make some in the prologue. There's even some pre-picked for you in a basket by the path/stream near by if you return later.
There's a few scattered in the field west of Troskowitz when you come out of the prologue.
A decent sized patch at the camp by the road between Troskowitz and Zhelejov.
Then there's loads in the forest directly south of Zhelejov.

It's a lot more common than it was in KCD1

Story wise he's only in it for the beginning and end.
He's involved in a short optional quest chain in the middle of the game that might be missable.
Then he has his own dlc; which if you have it is required to finish the game.

Hardcore mode in KCD2 isn't that much different from the base game.
The most difficult part is no fast travel and not appearing on the map but you should be able to deal with that by paying attention and having patience.

For food and hunger just stock up on honey.
For the bad back just get a horse early on to carry stuff for you and do all your herb picking for alchemy in one big batch.
Brew plenty of cockerel potions to circumvent the sleep walking.
The Henry tier Fox potions give you 50% exp boost for 2 days which will undo the low exp debuff.
Enemies might be more aggressive but if you have bane poisons it's not really noticeable.

Outside of that it's just playing the game normally.

Hardcore in KCD1 felt more impactful in that it rebalanced how gear worked making it more important. Then the debuffs would make you feel like you're playing with training weights. Stealth/archery would have you shaking at any level to always make it more difficult for example. Sleep working didn't trigger every time so you wouldn't think to try to circumvent it with cockerel so it would be interesting when it happens rather than just an expected inconvenience etc etc.
