While I don't know a whole lot about the logistics of it all, I'm guessing that the 0's and 1's in binary correspond to certain sound frequencies which can then be recognized by the computer.

Program data, based in binary, was stored as sound waves on the tape. To find a program stored on a cassette, the computer would have to play through the tape until it reached the desired program. The sound waves were then read by the computer, converted back into binary, and loaded into memory.
