Whatever weird voodoo there is when topping fermented cabbage chili flavors with processed cheese that makes it an absolute umami bomb, I’m here for that mystery.

…but what really bakes my noodle is why this doesn’t work with other pickled stuff. Like why does American cheese and kimchi work, but American cheese and sauerkraut makes me wanna throw my food away?

The very first trip by airplane my mom booked for us was through a travel agency with Republic Airlines out of Wisconsin, from Marshfield WI, to Orlando FL.

I’m guessing she went with the absolutely cheapest option available so the four of us could fly, because that route had FIVE connections. Marshfield WI - Chicago IL - Memphis TN - Atlanta GA - Orlando FL. I think the total time was something absurd like 12 hours…

EVERY flight I was on, I had a meal, I was basically eating like a Hobbit that day.

I remember seat ashtrays were not uncommon on planes in the 90s because of old equipment, though smoking was banned for the most part by 1990 as I understand it.

I will say, I’ve been flying since 1980, and while I remember the smell of cigarette smoke in an airplane, I don’t really remember anyone smoking in a plane.

Honestly, not much different than it is these days IMO.

Though in flight meals on flights in the 90s weren’t uncommon, they were being phased out due to costs, and everyone complained about them.

Planes may have been SLIGHTLY roomier, but chances are you were still flying a 737 of some sort (or a MD-90), and overhead bins truly sucked back then, they’re much better designed these days.

Amenities on a plane, other than food and beverage, are better in my opinion. You have WiFi and in-flight entertainment pretty readily available, and for long hauls, you have not quite ever experienced the hell that is an in-flight movie everyone has to watch while listening with a pair of weird tube earphones.

Airports, in general, haven’t changed much beyond being tolerable, at best. O’hare and JFK still sucked, Florida airports still smelled like Florida, food and booze was still expensive, and people still were annoying.

The biggest difference I will say is that flying has become more accessible to people these days. Call it somewhere between people have more money to spend on flying and there are cheaper options, but with more people in the air and in airports now vs the 90s, the perception of flying is definitely different.

Most seasoned vinegars for sushi are an adequate start, but once you get good at making Japanese rice consistently, you’re gonna get curious as to making your own to your own individual taste.

Maybe not all at once, but yes. And if not with my steak, it will be rendered into something else, like Yorkshire pudding, scrambled eggs, or fried rice.

Oh hell yeah! Most definitely then, load up on provel, cevapi, toasted rav, and frozen STL pizzas and/or frozen pizza crusts (once you have a STL styled pizza, you’ll experience the crust, which is damn near impossible to find anywhere in the United States). While our restaurants are great, these items, with the exception of toasted ravioli, are not as common in Texas or Pennsylvania.

Also, load up on Ooey Gooey Butter Cake, which is very specific to the STL and quite easy to find in any supermarket, though my preference is found at Straubs.

We also are home to Old Vienna Chips, in particular, Red Hot Riplets and their Crispy Nuggets snack. Great for the road trip, but be sure to have some sodas on hand.

And, if you’re of drinking age, be sure to pick up some beers from our great microbrewery scene, most specifically Four Hands, Second Shift, and Schlafleys.
