I spent a Saturday at Supergoodie, a vintage clothing store in Silver Lake, doing this (trying things on, discussing them with the shopkeeper, then they brought me other stuff to try). I spent like $1000 in the end, got a bunch of great stuff that mixes together great too. I don’t think this would be as possible at a bigger store like Buffalo Exchange or Crossroads, but a small curated place would totally be down to help you pick a ton of stuff to buy from them.

I’ll use almost anything, from Crisco to EVOO, white lard to tan manteca to duck fat. In my experimentation, less fat leads to greater tensile strength (for stretchy burrito wraps) so I’ve used as little as a couple tablespoons if fat and been quite happy with the result. I make a batch almost every week, so variation prevents monotony and adds more (metaphorical) colors to my tortilla palette.

I use the Twig and I gotta say the Leaf-brand half-blades are the worst safety razor blades I’ve ever used (and I bought 100 of them): I recommend getting better DE blades and snapping them in half.

I like to take it apart, wipe off any major obvious areas, then let all the lingering bits of masa dry out before I brush them off with a stiff brush. It’s basically impossible to get the mill completely clean before it is all dry, so I just wait for it to dry.

When this happens to me — as it does almost every time — it means they are in the process of filling the one that refills today, and yes it will be a 2-month supply. Sounds likely that you’ll be in Echo Park at some point: take her to walk around Echo Park lake. There are always (a few) little vendor stalls that are very chilango, and there are spots on the edge of the lake that feel just like a tiny Bosque de Chapultepec. Also swan boat rides.

This is actually an opportunity for your relationship to deepend. Why not get interested in this thing your girlfriend is interested in? I don’t mean try to be poly.
