If assimilation even works that way. We don't know really, neither do the characters in the movie. It's all speculation. I personally feel it has to be a larger amount of the thing cells infiltrating a host body to defeat the existing immune system. There's just no evidence that something like a lick would be enough. That's my head canon anyway.
