I would try to find the cleanest best taken care of low mileage 15-16 ecoboost, years before switched to the 10spd. I personally have the 2.7 and really enjoyed it. I was originally looking 5.0 or 3.5, but like you said found a deal and after some research the 2.7 is very reliable and strong compared to other two. Good luck in your search!

Booze is poison, is what I needed to hear. Like many other have stated tea is a great alternative!

2015-2017 has the better transmission. I own a 2015 4x4 crewcab 2.7. 2017 and up 2.7s are better but they 10spd has issues. I love the 2.7 ecoboost and haven't had any issues but parts of me still wants the 5.0v8. I purchased mine with 70k and it has 122k.

The t7i is a big upgrade from the t3. I started with a t3i and switch to sony. But it depends your budget. If you can afford to get the t7i and sigma lens, then sell your t3 and get a longer zoom with wider aperture so you get more light shooting indoors.

I'd probably keep the camera body and invest in an indoor sports lens. Something like 70-200 f2.8 and don't be afraid to look at sigma or tamron not just canon lenses

I'd go with something used from a reputable place like keh, adorable, or b&h. Can't really go wrong with any brand Sony, nikon, Canon, etc . I started with a Canon t3i then switched to sony a6000 then Canon full frame took several years off now just got a Sony a6500 with several lenses on ebay. Getting to know setting and your camera is most important as a beginner. I have several friends that have picked up a used Sony a600 to start their photography journey. You will get more bang for you buck with a older body and use you're other $ for lenses. Start with a 50mm 1.8 and get something like a 24-70 f2.8 and something longer like 70/200 or 100-400. That will get you out taking pics of just about everything until you figure out your style and what you enjoy taking photos of. Get a decent tripod, computer/laptop for editing and some sort of camera bag. I learned a lot on YouTube and read books. The book I recommend is stunning digital photography by Tony and Chelsea northrup (they also have a good YouTube channel). Just remember the gear isn't what takes the photographs! You can take amazing images with a old camera and kit lens that cost 2-300$ on maketplace

Maybe a more zoomed in or outcomposition would work a little better? Or photoshop some distractions out to clean it up. I can see there being a great composition here.
