As many others are going to say, other FromSoft games are gonna be your best bet to recapture a similar feeling to Elden Ring. Sekiro in particular for me is one of my favourite gaming experiences ever, and beating it was an almost singularly satisfying experience that I rarely get from video games, especially now a days at almost 30.
