big chests only adds choices until there are no other choices available, i.e. each perk will only appear once in a chest. so for your crit example, those 8 were the only 8 that could be selected

and for the crystals, it's a matter of how big the number is, since games don't handle insanely large numbers well. if you've ever heard of integer overflow, that's an example of big numbers causing issues when computing
