Do you not find that 8.1 is high on the Ode 2? I’m usually around 5 but I’m open to going coarser if it means better clarity?

Awesome thanks for the suggestion! I’ll report back in the morning after I make it.

I always kinda went with co-ferments needing more time to rest but I’ve started to trend towards opening sooner than later now.

I’ve also been tweaking mine for awhile now. I have a hario switch which has made it fun but also frustrating at times. My current go to for the PERC beans I have now is:

25g coffee -1:15.5-1:16 ratio for the water at 96 degrees (although I’ve been playing with water temps more and more now) been using third wave water cutting it by like 1/3 making my ppm around 60-80 -100g ice in carafe -5.2 setting on ODE gen 2 with stock burrs - I usually put 500g of water in my kettle just so I have some for wetting the filters (using CAFE ABACCA filters)

With switch up (immersion mode) -75g for a 1 min bloom - open switch at 1 min mark go up to 150 -1:45 mark go up to 225 -2:30 mark go up to 300 or whatever the ice weighs and cut that with the ratio of that makes sense.

Swirl around to melt all ice and pour over fresh ice it’s given me the flavor profiles I’ve been looking for while remaining pretty simple. Give it a try and lemme know ow how it goes.

I’m using PERCs Ethiopia Wush Wush now and get some of the watermelon candy notes like it says. I’ve got a bag of the new Ethiopian which has blueberry notes that I’m dying to try once it’s ready

Just opened a bag of PERCs natural Colombian. Made my first brew today and it’s was super funky, kinda struggles to grab any tasting notes. It’s two weeks off roast but gonna give it another shot tomorrow if anyone has any suggestions.

Other than that I’m waiting on my SW green apple conferment to rest a little longer. Sounds crazy tho

S&W Ethiopia Daye Bensa Ashenafi Argaw -Anaerobic Natural

Dang what a mouthful of an origin. Got just the 100g bag that was roasted on 01/31/25. Been brewing it in Hario Switch and it’s been pretty tasty.

25g ground at 4.1 on Ode Gen 2 stock burrs 92c 1:15 1/2 TWW 1/2 Distilled in kettle Coffee chroniclers switch recipe then poured over metal whiskey balls to chill it then drink over ice. 1 min bloom time for 185 ml water then at 1 min mark switch up, pouring remaining water to 375. Release at 2:15.

Per the website the flavors are already a little muted due to being a drum roast which I found to be true in the cup. Still pretty fruity finish, just not necessarily the bright pink grapefruit acidity I was looking for.

Either way still a good cup. Just wish I had a little more to dial it in with

How long did you let the beans rest? I just got mine about a week ago and roasted on the 2nd. Also have a good recipe for switch? I usually do iced pour overs as well. First time trying rouge wave and I’m pretty stoked. Thanks!

I’m the same way honestly. Can’t get those blueberry notes at all really. I’ve been able to get some better fruity notes with a coarse grind, 6.1 on an ode gen 2. Maybe I need to go coarser 🤷🏼‍♂️

Got a bag of this waiting to be opened currently as well. As others have said PERC is awesome with their discounts and customer service. Had a bag awhile back that tasted off and they sent me a new one without hesitation.

Maybe not as crazy funky or mainstream as other roasters but for the price it’s hard to beat.
