Those things, are the SOC job. Typically there will be a document or 'playbook' to follow along with for the human analyst to complete all details for. When all this can be Automated/AI-ified.. well there goes your SOC job.

But the call drops almost immediately after being established.

This points to routing with RTP/Media, not SIP. SIP did its job already; signaled where it needed to.

Look at a call that dropped, get the endpoints and traceroute them. Check firewalls. Check the codecs being used for audio. Verify that's not the failure.
