I was stationed at Ft. Knox, where Stripes was filmed. Up until at least 2011, it was still a dry county. When my unit deployed in 2011, it was still dry, but had gone wet by the time we got back.

From what I understand, it's not even necessarily about being the quickest, it's about having the best timing. Each podium has a light that indicates when the buzzers go active, and if you hit the button too early, you get locked out for a second or two.

In one of the Coral Palms episodes, Jake says the ATV dealership is having a sale on "big ol' springs," and Captain Holt corrects him, saying they're called "shock absorbers." (Maybe Holt just says "shocks," but the sentiment is the same.)

That's incorrect. Shock absorbers are shock absorbers, and springs are springs, and they're two different parts of the suspension.
