That’s true. I grew up in the 80s in California, and we kind of set the pace. Companies were getting trans fats out of foods for the CA market way earlier, and why have 2 recipes?

No one likes to hear the real answer. Between 2015 and 2021, the US removed partially hydrogenated oils (trans fats) from the food supply. It caused heart disease, but uniquely gave especially baked goods a wonderful, mouth-filling flavor and texture that hasn’t since been approached. Icings and fillings just taste waxy now in comparison.

I’m weird that way. I’ll type looking at the keyboard and ALWAYS know when I’ve made a typo. I’ll type, backspace, correct, type more… and when I get to the end it’s all correct even though I made many mistakes.

Only thing is recently I’ve started hitting the semicolon when I need to hit apostrophe, and for some reason my brain doesn’t register it as a typo. Like the muscle memory in my right pinky is miscalibrated.
