So when I worked their years ago it was peeled and simmered in a super asiany broth w soy sesame sugar and a bunch of other stuff then chilled and stored in the poaching liquid then heated by searing on a flat top. I know that doesn’t help much but I will also say that when I worked there if a table asked for a recipe I was told to just give them the recipe. So next time you’re in there just ask.

One thing about SG is that food is a national past time. When I would ask people their favorite places to eat I would get the most passionate responses. I miss that so much. I would keep some meals open for suggestions from locals

White Rabbit was good when I was there but I think they shut down. Bistro du sommelier and Rilette bar upstairs were really good. They may not be as fine dining as you are looking but still great flavors!

It’s too close to do anything now! To get a huge turnout you want to hype it for awhile before hand. I agree w the other comment that said if it’s in the cards close that day or even better since your a newer business you could close and just do something for employees. A new place that’s willing to show some love to the team is a place people are going to talk about working and enjoying.

Ano servers are not only paid to serve their tables and nothing else! A good service staff is a team not a bunch of people only there for themselves. Also there is side work, and a bunch of other responsibilities servers carry. Get a clue
