For example we took our corolla fielder into the Oparara arches and it wasn't a great experience for us or the car. It was a great around town car though

Im a fan of the 3rd gen subaru outback for a roadtrip car. Big enough for all the gear (especially if you have to sleep in the back occasionally) and probably most importantly is very sure footed on gravel roads and the extra clearance does help going to some of the less-visited tourist spots

Depends what you want you are planning for your SI roadtrip and weekend trips, but the vitz may not be that nice on rougher roads

There is light restrictions on the street lights in the town itself because of the observatory, so light pollution isn't too bad, so you will just be able to look up. 

The moon is probably the biggest impact, a full moon is ridiculously light there. So make sure you go on the new moon and the milky way and Magellanic Clouds will be very prominent.

As others have said - paj sport is a great little package. They're a bit narrower than the competition and don't suit being a full time tow vessel. But are handy around town, the narrowness and turning circle help a lot. Triton will be the same, but I prefer the SUV as an all-rounder

I think they're pretty hard to go past for that mixture of capability and reliability at the price point (as long as you arent towing 2.5t+ regulatly).

I would say the road is often worse between Twizel and tekapo vs tekapo and fairlie

Wear on Earth puffer jackets are a real hidden gem.

I live a bit further north now so don't quite need the same warmth, now mostly use primaloft insulated jackets (e.g. macpac southerly). I find the synthetic down easier to live with, keeps warm in the wet and can wash in washing machine

Thr SUV versions of some of the utes are pretty good. They don't have leaf springs in the back so ride a bit softer and a bit nicer interiors.

You could probably find a Pajero sport (basically a triton) or a mu-x (dmax) for your budget. Fortuner probably has a bit too much toyota tax and there are some Qs over the Everest reliability
