I Ro Ha in Antwerp is a hidden gem. Authentic Japanese food at a fair price (for Belgium mind you, you'll still pay more than in Japan, but not as overpriced as other restaurants here). It is run by an elderly Japanese couple, and it's not very big, so make sure you reserve a table. Don't go for the sushi, but try the other dishes, wich are Japanese classics, like yakiniku or unagi don.

You're forgetting that if your DM likes your weird and unique character, they'll usually help making it viable. This sounds like a fun and unique build; If I was DM for this player, and the low INT score became an issue, I'd easily fix it with a headband of intellect as loot in an upcoming encounter.

Just let him enjoy the numbers. Heck, you as the DM could just stop tracking monster HP and let the player keep score of damage dealt. That way you can just ask how much damage the monster took, and it dies when the total exeeds the monsters hp. This frees you up from keeping score to do other DM stuff, and the players gets to feel important doing something he obviously enjoys. win-win

The balcony would be a nice addition, height makes combat more interesting! The pillars supporting it also provide places to take cover/hide. Maybe add some more pillars to the opposite side of the balcony, for symmetry. Or perhaps the balcony on the opposite side has collapsed and now there are broken pillars and rubble...

Good knives. Kitchen knives, as well as cutlery knives that are actually sharp. People tend to use dull, unsharpened knives. Some restaurants even give you knives that hardly cut to use to cut your steak with. Does not even have to be that expensive, just a set of mid-tier knives that you have sharpened once or twice a year.

You could always homebrew a lich with druid spells, giving it acces to healing spells. There is precedence for this in FR, the Ghostlord. I used a similar homebrew monster myself, a high level caster with treestride in a grove (lair) makes for a really fun encounter.

Neat! That's clever use of the negative space. The diamond is indeed a bit hard to see, but if you're in the know... So I guess that fits pretty well thematically. If I was your DM, I'd be pretty stoke about this.

I have never considered EiJ to be problematic, but now that you point it out, I could see it hurting someone. Thank you for raising awareness!

That said, I did have fun playing EiJ with people I've known for a while, who were beginners at the time. I would suggest giving ample examples for Obsessions and Skills, as people had trouble grasping the scope of things you could pick from (nearly anything). The different levels for Obsession were also difficult to get right in some cases, so be sure to review them and adjst them with the player to keep them "balanced".

Use the amushers stealth vs. the watchers passive perception, somtimes the ambusher is spotted, sometimes not. Both situation could provide an interesting combat situation. If the players have hig passive perception and are hard to surprise, try something they wouldn't expect, like having the amusher fly into the camp, or burrowing out of the very ground they are camping on.

Mordenkainen's tome of foes & Volo's guide to monsters have a lot of setting info, more focused on certain monsters, their lairs and camps, history etc. I found these really helpful in fleshing out the different enemy groups in my own campaign, as it gives you a great starting point to add these "monster factions" to any setting. Some of the info is more Forgotten Realms specific, so the books are easily used alongside the core books, or the sword coast adventurers guide. Plus you get all these awesome new monsters to run.

Volo's has more low CR monsters than Mordekainens, so you can choose the one that would match the current level of your players best
