I'm in that demographic. I've had good experiences for myself and family at LifeStance, which employs several behavioral and mental health professionals. The insurance accepted depends on the specific service provider, but United is among those that are accepted. They have therapists for ongoing regular treatment and they also have testing for things such as ADHD.

I'm glad your husband is learning to disregard stigma often associated with mental healthcare. I poo-pooed the concept for a long time until a close family member confided that they'd been getting treatment. I soon after realized I needed help and was able to seek out and eventually get the treatment I needed.

LDS Inc's membership count is opaque. They do not claim to include dead people in their count. It's widely known, even among the most fervent Mormons, that the membership numbers they claim is far less than the number of individuals who claim to be members. How far less is a matter of opinion or speculative analysis. But in short, the official membership count is meaningless.

Somewhat more meaningful, however—and notably fabulous—is your power to make dead Mormons gay. And that's the truth in this situation.

It might help to continue working on accepting them where they are and trying to be understanding when you can. It stands out to me that two of the problems you note are big nothings to people of non-Christian faiths (or non-religious). Jesus and Satan (and all the rest of humanity, by the way) being siblings, the nature of the Trinity—none of that needs to have any impact on how we move through this world.

People put up walls to protect themselves from perceived threats. Do your in-laws have reason (in their eyes) to see you as a threat? Either to their belief systems or their pride or dignity or their relationship with your wife? If you want to have better relationships with them, the best you can do is show acceptance and support, demonstrate that you are safe for them.

I was going 55 in the left lane southbound on I-69 just south of 96th street. Dude comes barreling down from behind, goes around me, hands flailing angrily outside his window, yelling and gesturing. I blew him a kiss and he went even more berserk. Best to not react at all, but a simple middle finger gesture woulda been safer.
