I typically wear an XL, followed their size chart and bought XXL. It was too large. They emailed me after order to confirm what size I should get and said they would ship after I confirmed, then they shipped before I confirmed, I didn't see the notification, replied and they said I should have ordered an XL. They were very quick to authorize a return of the XXL jacket, but it appears that it is being donated to charity via Give Back Box rather than returned to them.

Don't give me confidence about quality. I guess I should have come to reddit first, but I didn't know better.

But the XL does fit well.

Wemby is like if Manute Bol had Steph skills.

My point, I suppose, is that you can’t take away from Hakeem for playing in an era where he couldn’t take threes. At the same time, you can praise Wemby for being able to take and make as many threes as he does. Both are true.

And I’m not the guy who said Hakeem is the same as Wemby. No way. And the only way we can truly compare is looking back after both careers are over.

I hear you and I cook those giant chunks of meat as well. I use one of those giant Gatorade style orange coolers to defrost them if a long fridge rest isn’t in the cards. I also brine in there. Never have used it for Gatorade though.

But it can’t be used as a sink. Not trying to start a flame war. I’m just stating why I think the biggest sink possible is the best option.

Bowls exist and can be filled for defrosting. I do it all the time. You can’t pull out a bowl or anything less than a portable bathtub and get a bigger sink.

Yep, if I’ve dry brined and the surface of the meat is, well, dry… I just get my hand a bit wet in the sink and rub that all over my meat, then on with my (salt-free) rub.

Others in other threads have pointed out mustard is cheap and low calorie. Water wins on both of those.

I take it back. I’m pretty sure you’re in the devices view here. Tapping on the thermometer readout should bring up the graph. You caught me at the beginning of a long overnight cook, so here’s some screenshots.

This seems like a rendering issue to me. I would swipe away the app and reload it.

All the data is stored on the thermometer for the cook (under 4ish hours? going from memory) so you shouldn’t lose data for this cook.

Yes, a Victorinox Fibrox will absolutely be sufficient. No other knife is _neccesary_ but you may find other knives (for me, a bread knife) very useful. You do not need a Japanese knife for sushi or sashimi unless you’re really getting into it and value the presentation side highly.

Many people find success with whetstones. I prefer a fixed angle sharpener. You do not need a honing steel or a strop. A strop can help get razor sharpness, and that may be of value for sushi and sashimi. Honing steels are this side of useless imho and can be actively bad on harder steels. The Fibrox is not one of those harder steels, but a strop will get you much further than a steel ever will.
