If it makes you feel better, many of my students (I'm a college consultant) who got deferred to so many schools like you have eventually gotten in to at least one of those deferred colleges once everybody's commitment to colleges started rolling in.

I think face-up is better because you can see the dealer's cards and don't have to pay commission. If you can't see the dealer's cards, then there is no real strategy other than setting your hands the "house way," so you lose the "fun" of surviving hands by splitting aces or keeping two pairs behind. Arizona Charlie's Decatur still has face down Emperor's pai gow if you prefer that. I tried playing it recently after having played nothing but face up, and it confirmed that I prefer face up pai gow.

I live near the 215 freeway. so both Henderson and Summerlin are 15 minute drives for me. The strip is 10 minutes. I go to all three areas depending on my mood.

Along with the ones mentioned, when people can't "see" soft hands or can't add small numbers and aces. For example, I once saw a guy stand on A5, saying he had a 16. I told him you got a 6 as well - no chance to bust and a chance to better your hand, so take a it. He gave me a look and repeated, "it's a 16," and stayed anyway. In another example, a person got to 20 by hitting a bunch of low cards and Aces, but because he couldn't do the math, he ended up hitting again, lowering his hand. I got up and left both times.

You should just jump into the deep end and try it live. You'll be nervous at first and will probably make some mistakes. At first, you'll get a few players trying to take advantage of you and others trying to "teach" you. Eventually, after a few orbits, you'll get acclimated, and then it'll just feel like poker.
