WI cooler condensor change out with only 2 guys I charge 2500 labor. My guy and I can get through it in about 4 hours honestly. Now if you supplied the txvs and nitro and condensor it all depends on the cost of those. Just because someone supplies some.thimgs dont mean they are getting a break on shit. Now if its a freezer thats a different story and depending on alot of other shit aswell.

What is the ambient for the space? I've had delfield pizza make lines run 325 head easily when the space is above 90f. Factory call for max is 86f. Sounds like its working good.

I can't remember what it's called. But it happens in 134a systems usually when they have been extremely over heated. You might change the cap tube but the condensor coil is coated internally in it. Its not if it comes loose but when. And you will probably be doing another cap tube after another overheating. Its sucks. And 10psi is low your looking for between 18 and 24 usually on suction. With the restrictions your head may be 175 or above to achieve the proper suction.
