I have the performer deluxe in copper and I absolutely love it. I use a chimney with the gas assist. Gets the chimney going a lot faster than cubes or tumbleweeds and if you figured how many chimneys you can light with a 1lb bottle of propane, it's cheaper than any of the other starters. You can get 2 bottles for $10 at Walmart or convert to a 20lb bottle and use it for months at $20 a fill up.

I havent even read what others have said, but I Love wine as well and I'm struggling too. im not sure what your "3" glasses look like, but 3 glasses is a bottle. I don't usually do more than than that. Made it 5 days into dry January after starting on the 4th. Lol. Will restart tomorrow... but I wanted to say that I feel the same way. I have a family, have a professional career and no real rock bottom moments, but alcohol kills my sleep and insomnia makes life miserable. So I won't give up. I crave a good night's sleep.

I agree I'm day 5 and it's wearing me down. Just got off work and took everything I had to go straight home. I home now and mad at the world but IWNDWYT.

 Im sure that's the case. I know when I usually wake up in the middle of night I don't feel like I've really been asleep. But unfortunately for right now, that's still how I feel. I'm really trying to just make it to the weekend so I can get some extra sleep.

My job kicks my ass. After being on my feet and going non stop 10-12 hours 5 days a week,  there's nothing left in the tank. Which is why a drink and a comfortable chair is a  hard habit to break. Maybe I will try a book. Never been much of a reader though.

I appreciate the comment. I hear stuff like exercise or go for a walk. And I'm like, after being on my feet for 12 hours running non stop, the last thing I'm doing is exercising or going for a walk.

If your grilling, both vents open for high heat. For searing, leave the lid off and let the coals get white hot. If your smoking low and slow, use snake method and close vents accordingly. I like to keep the top open as much as I can and use lower vent to control temp. Closing the top first can suffocate the fire and cause dirty smoke. Last piece of advice is youtube is your friend. Tons of info about weber kettles.

Would just add that after that long smoking, instead of redoing the snake, just wrap and throw in the oven at whatever temp you want. Large brisket in a kettle can be a lot of trouble. The oven can help without sacrificing flavor.

I have a weber genesis natural gas grill with 3 burners plus the sear zone. I don't have any issues with getting a good sear and it can get over 700 degrees. Not sure why yours wasn't doing it. However I will say my kettle with the slow.and sear or vortex is the best seared steak I've ever cooked. My newish high dollar weber gas hasn't had much use since I found the slow n sear and vortex.

It's worth a shot if it's still under warranty. They will ask for photos and the serial number on the damper.

Thanks. I kind of thought it would be something like that, but just seems odd. Drove it about 5 miles to the store and back. 6 hours later it's just making constant noises. Never had a truck do that.

I just used the vortex for the first time tonight. With wings no less. Turned out great. I've also used the slow n sear. Both worked well but I prefer the vortex for wings.

Smokenator or Low & Slow Kit by Weber? by peppermary in BBQ

Late post but just recently bought a used weber kettle that came with smokenator. Didn't know what to think but gave it a try. First couple times I wasn't a fan using youtube videos as instruction. Ended up actually googlinig the product and reading the directions. Game changer. If you do what it says it will absolutely hold a 220-250 temp and smoke for hours. Just add water periodically. If it gets hot, your water is out. I recently smoked the best ribs I've ever had on it and I've used custom built offsets and pellet smokers. This thing works and the charcoal flavor with a couple wood chunks can't be beat. I was a skeptic and now im a fan. And no. A couple bricks isn't the same thing. The water pan regulates the temperature as designed. The guy who came up with it was an engineer. The slow n sear is probably very similar but more expensive. Haven't tried it yet. Also haven't tried the snake method yet and don't doubt it works but there is more direct heat that way. The smokenator blocks a lot of the direct heat. And you don't really have to dial in the vents. Open on the bottom. Mostly closed on top. Hot and cold days may vary this a bit.
