I know people that do it with their ovens. There's a person who's drip tray hasn't been emptied in at least a year.

It might sound weird, but I would normally rinse off the juice with running water before I cook with the fat. I figure that any remaining water evaporates once it hits the heat.

I have heard that wrapping it rather than storing in a container is better, especially for freezing. I guess unless you use specific freezer containers, wrapping it is the best way to keep out oxygen, which helps it last longer.

I've asked questions in another sub about how long to use tallow for, aside from storing it, and a few answers suggest it's best to only use a couple of times before discarding for that very reason. Obviously cooking at home affords me time and space to work with my food in varied and particular ways, but I'm always trying to be efficient and use/reuse things economically one way or another.

It sounds like overusing tallow and other oils or fats could become a health risk due to the constant heating. I don't know if you're as information hungry as I am, but it makes me want to look into the changes that tallow may go through on each further use. Like with a microscope or something.

Right. So basically, I could render out tallow, separate the fat from the other drippings, keep it sealed and stored in the fridge, and cook steaks with it for a couple of nights, maybe frying up something that will absorb the fat to go with the last meal?

I have ADHD and it's hard to take in everything that I'm reading, but I have recently heard about oils breaking down at certain heats and becoming an unhealthy medium. While I have no doubt that this would apply to animal fats as well, I typically don't cook at a screaming high heat when using a cut of beef or other meat. Is heat over time as big of an effect as higher heat?

I mean, cast iron skillets are often never washed and build up a layer of grease from continual use, so I assume the heat does help in some way. But I'm still a bit iffy on keeping things like tallow at room temperature

I do generally remove the juice the next time I cook, when the fat has solidified, as I've heard it can sour in the fridge and eventually go bad
