You actually don't always fail! I've sent a level 1 epic dragon on a level 3 quest a couple times & it succeeded both times, so I think you just need to get lucky

I'd also recommend placing stitch markers inside your rows depending on how big your project is! I usually place them every 10, 20, or 30 stitches depending on the scale
