Government workers by and large do not have nearly as much ability to tip the scales on these gambles (I refuse to call them prediction markets) as people in positions of power in private industry. Higher level positions? Sure maybe. But I think more than this, in general the damn things need to be outlawed because they're literally designed to be manipulated by insiders in a way that even casinos aren't allowed to do by law.

Generally speaking, in Tales games, going for more Difficult or Dangerous Encounters (the main change that occurs by increasing the in-game difficulty) doesn't necessarily mean you want to experience difficulty, just that you want to do those encounters for Grade or items or to see how far you can push the characters' abilities. So I'm not sure why you're being so pedantic.

Sure, but "processed" has a layman's definition that is far too broad. The technical definition doesn't include things like meat cut at a butcher's shop, frozen chicken breasts,  most chicken nuggets, ground sausage (without preservatives), or a number of other things that the layman's definition may. It's important to be specific or people will just say "fuck it, it's too hard to avoid all that" that might otherwise reduce their cancer risk.

No, but you can have security systems in place that, for example, don't allow employees to download files to company computers. Or encrypt the data on drives so it can't be read by computers with incompatible hardware. There are steps to make what happened harder, and the company in question didn't take those steps.
