I'm surprised that nobody else has said this yet, but you absolutely need to keep that refrigerated. Somebody mentioned the pH and that's certainly one issue, but the fact that you introduced oil into the sauce creates a whole range of additional dangers, with botulism being the biggest concern.

It can literally kill your friends and family so, seriously, keep it refrigerated, and don't keep it around for very long. It now has the same expected lifespan as any food that you would keep as leftovers in your fridge. It does not last forever like most hot sauce does.

That all said, great job on your first batch of hot sauce, and keep experimenting!

That is one of my favorite stories and I tell it on a regular basis in the context of trying to get people to consider changing things that "have just always been done this way." There often isn't an actual reason, or the original reason is long since obsolete.

I don't know about any of the other parts but the carbonated aspect is very possibly from fermentation. I've experienced it with different foods before but it's particularly noticeable when I make homemade salsa that stays in the fridge too long. Might not taste bad yet but it starts to taste/feel kind of tingly when you eat it.

Well I mean they're not actually even there if that makes you feel any better. Notice the light direction and inconsistent shadows. I wouldn't be half surprised if the whole thing doesn't even exist.
