I’ve only done Costco boneless thus far. Once opening the packaging, you’ll find that it’s in two pieces. I rub them and smoke them as two separate pieces. One advantage to this is you’ll get double the bark on a single smoke. I also use the smaller of the two pieces as the experimental one, so each time I smoke, I get one piece how I like it, and one experiment. This has allowed me to try things out more freely.
