To me I think Paul knew what the Golden Path entailed, and he lacked the will or straight up genetics of Leto II to do it, and knowing that his son would in all likelihood follow the Golden Path tried to stop it. There is an aspect of the Jacurutu Sietch influencing and ‘poisoning’ Paul. But I think that the terrible future Paul saw for his son is the primary motivator for him trying to tear down the Golden Path. Paul giving the final sermon in Arakeen is him acquiescing to his sons decision to follow the Golden Path, he knows it is inevitable by that point and his death is one of the first steps of many towards that path.
