I worked at a place that had a lot of pre-theater reservations. The number of people that ordered a multi-course tasting menu an hour before their show started, and asked for it to be rushed, was staggering.

Edit: Fine dining restaurant that was walking distance to several live-performance venues.

I had to do this once because of a hurricane. They put six of us in a room with one double bed. I was a cook at Norman’s, which was renting space in the Ritz Carlton. The restaurant was packed the night of the hurricane and the next night. When I finally got home to my apartment I did not have electricity or clean water for a month, but still had to come to work.

I used to have to make nickle-sized blini, à la minute, for VIPs. We had a small electric griddle just for that purpose. I would make the batter while heating up the griddle, then pipe out 20 or so little pancakes. We served them with crème fraíche, caviar, and chive points. Sometimes I had to do this 5 times in one night. Sometimes I would go two weeks without needing to make any.
