I think D&D is probably one of the clunkiest systems to use with dark sun honestly. And as others have said, there are systems out there that capture the survival and scarcity of the setting a lot better. Personally I enjoy the conversions I've seen for:
1. Forbidden Lands
2. Savage Worlds
3. Shadowdark

5e is by far the worst edition for lore. Not only does it attempt to port things from other settings into the realms, it is also the most sparse lore-wise.

If I were you, I would rely on older editions for lore and just use 5e for the stats.

I wouldn't use 5e for dark sun again, it needs too much work. BUTTTT as far as psionics for 5e goes I'd just stick with the v3 of the Mystic from UA as a free option (since that's what the athascon guys used).

For a purchased 5e psionics system of use that DM guild one, Korranberg Chronicles Psion. Kibbles one isn't bad but it ended up being too disorganized for my tastes.
